The irony. After two years, it’s still a habit. It was an extraordinary day in an adorable little Icelandic village. Our plan was to look around town, and cook a lamb dinner. What an epic lamb dinner we made!

With little experience, St, and I pulled off a wood grill lamb leg with roasted bell pepper, mushrooms, and a spinach salad. I created a decadent skyr dipping sauce to die for. All these ingredients where locally grow which is the best part. Back home, there’s a constant debate to establish if Canadian lamb is better than New Zealand lamb. Guys, you got it all wrong. Not only Iceland has the best fish in the world, they also have the lamb. I love lamb, I’ve tried this meat on fice continents, and by far, Iceland wins. Also, they have the best drinking water.

On the forth day of Icelandic eating, I feel rejuvenated, and balanced. It’s a shame that it costs so much to travel or live her. I don’t know if I’ll have a chance to come back, but I’ll keep my memories close to my heart. Tomorrow, we will start our way back home.
